The Bright Idea

I can still remember the smell of my 4th grade science book and the shock I felt when I saw that page that changed my life...

I moved to southern California for college and my early professional career. Healthy, organic food was at my fingertips daily. While I was working long hours as a non profit fundraiser, longing for a convenient meal that could meet my dietary needs, the acai bowl was arriving to the SoCal scene. I was obsessed. It was everything this busy girl with a complicated diet needed!

Life and work brought me home to Chicago. Marriage and three kids soon followed as well as a gluten and dairy allergy. I longed for those acai bowls daily leading me to create my own perfect recipe that would conquer my nutritional needs without any added sugar. My bowls were not only clean and healthy but they were so delicious...they truly brightened my day.

There it was swimming freely in the ocean, happy as a clam (or in this case,  "shrimp"). It all clicked for me. I went home and declared I was now a vegetarian. In the early 90's this was no common declaration and out of concern for my development and well-being my parents took me to see a nutritionist. It was there where I fell in love with food science and learning how food fuels the body. I learned that not only could I be a perfectly healthy growing girl who doesn't eat meat, but I could end up being the healthiest person in my family.

Determined to show my kids (now 11, 9 and 7) how fun and delicious healthy food could be, I created a smoothie bowl using every color of the rainbow and organic foods from around the world. One day I posted one of these bright bowls on instagram and my neighbors and friends asked if they could place orders from my kitchen for themselves and their kids. Bright Bowls was born!
